Raw rocky road and caramel slice

If you don’t have time to do the caramel layer, then this rocky road slice is delish on its own without the caramel, but the caramel adds another yummy dimension. Do what you have time for.


Rocky Road Layer – 

Chocolate ingredients –

1 cup melted coconut oil

1 cup raw honey

1 1/2 cups raw cacao powder

Pinch salt


Rocky Road ingredients –

1/2 cup goji berries

1 cup shredded coconut

1 cup Buckinis (dehydrated buckwheat groats)

1/2 cup seeds (mix your choice – pepitas, sunflower seeds, hemp seeds)

1/2 cup crushed walnuts

1/2 cup dried apricots, sliced


Caramel Layer – 

1 cup dates

1/2 cup water

1/4 tsp Celtic sea salt (or healthy favourite salt)

1/2 tsp vanilla OR seeds from 1 vanilla pod

4 TBS coconut oil


Method –


1. To make the Rocky Road, first make the chocolate in a big bowl by stiring the honey and coconut oil together, then add the cacao powder and salt.

Once combined, stir in all of the rocky road ingredients until all coated in chocolate. If you feel there needs to be more rocky road filling as the chocolate could still have runny parts, then you can add more of the coconut, nuts or dried fruit of choice.

Spoon mixture into a rectangle dish lined with cling wrap. Place in the freezer to set.

2. To make the caramel, blend all the ingredients together in your food processor or blender until creamy and thick. If you need more water add it in little bit by little bit. Pour on top of the set rocky road layer and return to the freezer to set.


Once set, approx half an hour or you can leave it overnight, slice into squares and either enjoy right away, or put the pieces into containers and store in the freezer for when you want to serve them. Should take 15 minutes to thaw out.
